Broccoli Bean Red Curry Stir Fry


  • 1 cup brown rice
  • 1 tbsp olive oil
  • 1 tbsp red curry paste
  • 1 cup broccoli, chopped
  • 1 small summer squash, chopped
  • 1 small red pepper, chopped
  • 1 cup black beans


Cook rice according to package directions or these awesome instructions. Meanwhile heat olive oil in a wok. Once hot – but not smoking – add red curry paste and mix. Add in black beans and sauté (if using dried beans, you’ll need to follow instructions for soaking and cooking them separately). Add coconut milk, and vegetables to the wok. Add broccoli, stir fry for about 2 minutes, add red peppers, stir fry for an additional 2 minutes, add summer squash, stir fry until all vegetables are crisp. Serve over rice.
