Sautéed Curly Kale


  • 1 large bunch kale or 2.2 lbs. of kale leaves
  • 1 tbsp. olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, thinly sliced
  • 1/2 red chili, thinly sliced
  • Salt & freshly milled pepper

Bring a large pot of salted water to the boil. Meanwhile, clean the kale by ripping the leaves off the stem and washing them thoroughly. Place the leaves in the boiling water and boil for approximately 5 minutes. Drain and place the leaves on a large plate.

Heat the oil in a large frying pan and gently fry the onions, garlic and red pepper for approximately 5 minutes. Now add the kale. Toss and sauté for another 10 minutes.
